Beautiful Beetroot

Every part of the beetroot is edible, leaves, stalks and roots.

Beetroot are one of the top foods you should be eating (The 150 Healthiest Foods on Earth, Dr Bowden)

Beets are like red spinach, rich in folate, vitamin A & K and as well as the natural red pigments that may be cancer fighters.

Try to eat the root of the beetroot raw as much as possible, as cooking them reduces the nutrient levels.

I've got my bunch of beetroot, now what do I do with the stalk and leaves?

Beet leaves taste much like spinach, but the texture is more like kale. Use them like silverbeet/chard.

Cook them as you would spinach etc. Add to soups casseroles, awesome with eggs eg. frittata

You can pre-cook beet leaves and freeze, ready to use for quick dishes

Or chop up and freeze to add to longer cooking dishes eg. soups, casseroles etc

Try making a fresh beetroot leaves soup

Warm spices like allspice, cumin, cinnamon, pepper, paprika and caraway seeds go well with beetroot (curry like spices combined), as well as fresh or dried herbs like thyme, tarragon, dill, parsley, mint, basil or coriander.
